Trigonella foenum-graecum An ancient and revered spice in India, Africa and the Middle East, Fenugreek is remarkably easy to grow and has been used medicinally for a wide variety health issues. Harvest the young shoots as a vegetable, and dry the foliage for its herbal flavoring. Allow the plants to bloom, then harvest the seed for its mildly sweet, nutty, burnt sugar flavor. The seed is traditionally used in a plethora of dishes from fresh sprouts to tea or vindaloo paste and curries. Mature plants reach 1-2 feet tall and will re-grow for season-long, continuous cutting.
