Surprisingly, celery contains about a dozen antioxidants as well as about 37% daily value of vitamin K in 1 cup. Culture
• Celery and celeriac are water-loving plants and do best in fertile, well-drained soil, with a pH of 6.0-7.0
• Apply 1 cup of TSC's Complete fertilizer per 5 row feet, and 1 inch of compost
• For consistent growth, fertilize regularly with Age Old Grow, and maintain even soil moisture
• Mulch around plants with clean straw to preserve soil moisture
• Weather fluctuations and temperatures below 55°F can cause celery to bolt

Direct Sowing
• Not recommended

Transplanting
• Celery seeds need light to germinate. Press into soil lightly.
• Sow indoors 10-12 weeks before anticipated transplant date
• Avoid planting too early before weather has stabilized

Insects & Diseases
• Common insects: Carrot fly
• Insect control: Row covers at planting
• Disease prevention: Crop rotation, adequate water supply, and insect control

Harvest & Storage
Celery
• Pick individual stalks as needed to keep the plants producing over a longer period. Stalks can be harvested once they've reached 8 inches. Harvest from the outside in
• Darker stalks contain more nutrients but will be tougher
• Plants can also be harvested whole• Celery can tolerate a light frost, but not repeated frosts
• In milder climates, celery may be overwintered, occasionally producing stems during the colder months, then increasing in production before beginning to flower
• Store in a plastic bag at 36°F and 95% relative humidity for several weeks, or cut into 1/2" pieces and freeze

Celeriac
• Harvest individual young leaves for use as a seasoning
• Harvest the whole root in the fall once the weather has cooled and the root is 3-5” in diameter. Use a tool such as a hand spade or knife to lift the bulb out of the ground
• Store at 36°F and 95% relative humidity for 6-8 months. Keep some of the soil in place to help keep the roots from drying out in storage
